Greek Honey Nut Pie




4 c chopped walnuts (you can use pecans)
1/4 c packed brown sugar
1 tsp. ground cinnamon
1 c butter, melted
1 pkg. (16 oz) frozen phyllo dough, thawed

syrup:
3/4 c sugar
1/2 c water
1/2 c honey (I used agave nectar)
1 tsp. vanilla extract

1. In a large bowl, combine the walnuts, brown sugar and cinnamon; set aside. Brush a 9" pie plate with some of the butter; set aside.
2. Unroll phyllo dough; keep covered with plastic wrap and a damp towel to prevent it from drying out. Layer eight sheets of phyllo in pie pan, brushing each layer with buter and rotating sheets to cover the pie plate. Let edges of dough hang over sides. Sprinkle a third of the nut mixture onto the bottom.
3. Layer four sheets of phyllo over nut mixture in the same manner; sprinkle with a third of the nut mixture. Repeat these last two steps. Top with an additional 4 sheets of phyllo, again brushing with butter and rotating sheets. Fold ends of phyllo up over top of pie; brush with butter.
4. Using a sharp knife, cut into eight wedges. Bake pie at 350 degrees for 40-45 minutes or until golden brown.
5. Meanwhile, in a saucepan, combine sugar, water and the honey; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add vanilla. Pour over warm pie. Cool.



This pie is absolutely wonderful. The light, flaky, buttery layers melt in your mouth. The walnuts give a wonderful flavor to this pie. This is a pie that you will make again and again.

Oh My Oreo




1 package of Oreo cookies, save 8 cookies for topping
2 boxes of Oreo pudding mix
4 cups of milk
1 tub of cool whip
Hershey Chocolate bar pieces, for topping

In a mixing bowl, mix Oreo pudding mix and 4 cups of milk. In a large bowl, crumble half of the Oreo cookies and place on the bottom of the bowl. Layer half the pudding mix on top of the crumbled cookies. Crumble the rest of the Oreo cookies and put on top of pudding mix. Top with cool whip, reserved Oreos and chocolate bar pieces. Chill and serve cold.

*This is one of the easiest recipes around. In fact, I didn't have a recipe and just threw this one together last minute. It is delicious and super fast. I used skim milk, light cool whip and reduced fat Oreos to make this a little "healthier". haha

Sweet and Salty Dream Dessert



15 oreos, crumbled 5 oreos, crumbled for topping
1 pkg Reese cups candy, crumbled for topping
10 pretzels, crumbled 5 pretzels, crumbled for topping
1 small pkg. instant chocolate pudding
2 cups milk
1 8oz pkg. cream cheese
3/4 cup smooth peanut butter
1 cup 10x sugar
1 tsp vanilla
milk
2 containers cool whip

In a 9 x 13 pan, place your crumbled oreos. Mix cream cheese, PB, 10x sugar, vanilla and enough milk to make a smooth consistency, fold in 1 container of cool whip. Layer this on top of oreos. Place pretzels on top of this PB cream layer. Mix instant pudding mix with milk...let sit for 5 minutes. Layer this on top of pretzels. Cover with cool whip and top with crumbled oreos, PB cups and pretzels. Chill in refrig until ready to serve. Enjoy!

This is a great dessert for those who love a little something sweet and a little something salty. This is a crowd pleaser and will be wiped out. Hey...this is one dish you won't have to clean. haha

Fluff



1 container cottage cheese
1 small container of cool whip
1 small package of jello, lime or orange
2 cups mini marshmallows
1 cup chopped pecans or walnuts
1 can of mandarin oranges or chunk pineapple, drained

Mix all ingredients together and chill before serving. You may also use any fat level of cool whip and cottage cheese and sugar free jello. This is a easy recipe and really tasty. It is light, fluffy, creamy and yummy!

Sticky Buns



2 pkgs. refrigerated biscuits(the small size/not Grands)
3/4 c white sugar
3 tsp cinnamon
3/4 stick butter
1/2 c brown sugar
chopped nuts, optional

Grease a pie pan. Open biscuit tube and separate biscuits. Roll each biscuit into a ball. Roll the biscuit ball in the cinnamon sugar mixture until well coated. Place in pie pan. Continue...until all biscuit balls are in pie pan. Melt butter in a small saucepan and add brown sugar. Cook over medium heat until brown sugar is dissolved. Pour over biscuit balls. Bake at 400 degrees for 18-20 minutes or until lightly brown. Add chopped nuts the last 5 minutes of baking. Enjoy!

My aunt Debbie use to make a similar version of this called Monkey Bread. It is warm, gooey, delicious and comforting. Serve warm and enjoy!

Banana Split Dessert Pie




1 large ready made graham cracker pie crust (10 serving)
2 sticks softened butter
2 eggs
2 c powdered sugar
1 tsp vanilla
3 large bananas, sliced
1 (16oz) can crushed pineapple, drain juice
1 container Cool Whip
Hot Fudge Sauce
Maraschino cherries

Combine softened butter, eggs, powdered sugar and vanilla. Beat until firm. Spread over graham cracker crust. Slice bananas and place on pie next. Place drained pineapple on top of banana slices. Spread Cool Whip over fruit layer. Top with drizzled hot fudge sauce and maraschino cherries. Chill until ready to serve.

I made this dessert for New Year's Day and everyone loved it. This is a really simple recipe and tastes heavenly.

Old Fashioned Bread Pudding

6 eggs, slightly beaten
1/2 c. sugar
1 tsp. vanilla
Cinnamon, sprinkle over top
3 slices bread, broken into pieces (better with day old bread)
1/4 tsp. salt
3 c. milk, scalded

Combine eggs, salt and sugar. Add scalded milk and vanilla slowly. Line baking pan with bread, pour in filling over bread and sprinkle with cinnamon. Put in pan of water to bake. Bake at 450 degrees for 10 minutes. Reduce to 325 degrees and bake 30 to 40 minutes, until knife inserted comes out clean.

So here's the thing...what's better and more comforting than warm bread pudding. This recipe is great to use with those day old pieces of bread that you're ready to feed the ducks! haha :) One bite and all your troubles will be mended.*

Grandma Yount's Famous Peach Cobbler

8 large peaches, sliced very thin
6 slices white bread, slice into "finger" strips

Melt together:
1 stick butter
1 cup sugar
1 egg, beaten
1 tsp. vanilla
2 TBSP. flour

Mix well.

Butter 9"x13" pan, spread peaches in layers in pan. Place bread on top of peaches and pour melted mixture over the entire dish.

Bake for 35 minutes at 350 degrees. Enjoy!

This recipe is a must make! My grandma Yount has made this recipe "famous" in the Yount family. She never has leftovers and usually people are racing to the table to get a dish. The white bread makes a wonderful top crust. You can substitute apples, strawberries, blueberries, pears, etc.. for the peaches. Serve this warm with vanilla ice cream of cool whip. This is one recipe that will not disappoint. :)

1, 2, 3...Quick As Can Be

1 Angel Food Cake or Butter Pound Cake
1 can pie filling, cherry, blueberry, lemon, strawberry...your choice
1 container Cool Whip

1. Cut cake into cubes
2. Layer cake, pie filling, cool whip, cake, pie filling and cool whip
3. Chill and you're done

Your phone rings and you're invited to a last minute get together. Aaahhh...what are you going to make. This dessert is as simple as it gets and very good. It takes under 5 minutes and you're ready to walk out the door. Enjoy!

Yummy Baked Custard

3 eggs, slightly beaten
1/3 c sugar
dash of salt
1 tsp vanilla
2 1/2 c milk, scalded
Nutmeg or Cinnamon
Fresh blueberries, raspberries or blackberries for topping, optional

Heat oven to 350 degrees. Blend eggs, sugar, salt and vanilla. Gradually stir in milk. Pour into six 6-ounce custard cups. Top with blueberries, raspberries or blackberries, if desired. Sprinkle with nutmeg or cinnamon. Place cups in baking pan, 13x9x2 inches; pour very hot water into pan to within 1/2 inch of tops of cups.

Bake at 45 minutes. Remove cups from water. Serve warm or chilled.

Jeremy's aunt Rachel introduced me to baked custard. If any of you reading this know my grandma Yount or her sister Ruie Golden's cooking, than you know Rachel's cooking. Comfort food and cooking at it's best! We were over at Jeremy's grandma Thomas' home one afternoon, when she was still living. Jeremy's aunt Rachel was there and making a large batch of custard. I remember the smell that came from that oven holding this wonderful dessert. I couldn't wait to try it! As quick as the custard came out of the oven...it was gone! Everyone enjoyed it so much and Rachel was on to making the next batch! Smooth, rich, warm, creamy....yummy! This is one recipe that your family is sure to treasure.
